Zucchini is everywhere in the summer. Luckily zucchini is extremely nutritious and delicious.
If you already mastered the basics of cooking zucchini or feel adventurous, this is the place for you.
Zucchini can be used in many interesting and unique ways that can help you get over some of those nasty refined and processed carbohydrate cravings.
1. Substitute Zucchini For Noodles
Zoodles or zucchini noodles is one of my personal favorite ways to use zucchini.
I am a pasta fiend, and this helps quell my craving for spaghetti. Zucchini noodles are not only amazing in Italian dishes, but any type of cuisine that uses noodles such as Thai, Greek, Chinese, Japanese, or Vietnamese.
I was first introduced to this concept from the blog Inspiralized.
The recipes on this site looked so amazing that I bought a spiralizer, and every since then I have been turning my way into delicious noodle dishes.
If you are not ready to invest in a spiralizer you can julienne the zucchini with a knife or julienne peeler.
